Parmesan (grated in the UK)
Made in the Emilia-Romagna region of Italy, Reggiano is a traditional hand made cheese whose recipe and methods of production have barely changed since 12th Century. Even the cows' diet is controlled to include only fresh grass, hay or alfalfa. The enforcement of these rules adds to the production costs but the result is a cheese whose flavour and quality is guaranteed. The aroma is sweet and fruity, the colour sandy yellow with the taste being intense. It is brittle and crumbly with tiny crystals of Calcium lactate found in the cheese itself. The cheese has to have been matured for at least 24 months to be called a true parmesan. Although this is the most common maturation period the best quality parmesan is matured for 36 months and even 48 months. The best kind of Parmesan is made between April and November.
